Easter Prep

Our Easter feast started the night before to prepare for the festivities.  My Friends Gretel Billadeau and Crystal Bench came over to help prepare for Easter.  Our husbands were playing video games so we had to keep ourselves busy.  We had a blast learning to make bunny rolls, funeral potatoes, and apple cristp.  We enjoyed listening to Disney music and finished the night snacking on salsa, warm bunny rolls and watching the movie Love Happens (a very good chick flick).

First we started with my grandma's famous Bunny Rolls.  Bunny Rolls are a orange roll with a cherry glaze. They are a little time consuming, but way worth it.  Grandma Joyce's bunny rolls is the treat that only shows us during Easter time.  I should make them more often becasue they are so tasty and quite cute!

Bunny Rolls (double)

1 Package of yeast (just under 3 tbls)
1/4 cup warm water
1 cup  sugar
1/2 cup butter (one stick)
Beat 2 eggs with warm liquid
1/4 cup orange juice
5-5 1/2 cup flour
1 tsp salt

Warm milk, water, and butter together.  Put yeast into the mixture. Beat eggs and add to mixture. Put the mixture into your mixer or a large bowl.  Add remaining ingredients.  Mix until the ingredients are mixed together.  

Let rise 1-1 1/2 hours, punch down, let rise again for 30 min.  Roll into bunnies ( picture instructions below).  Let rise 30 more min.  Bake 12 minutes at 375. 

Cherry glaze
2 cups Powder sugar
2 tbs melted butter
10-12 mariciano cherries
1 tbs cherry juice
mix together and drizzle over bunny rolls
(disclaimer: the glaze is made by estimates.  If you need to add a little of something or take it away feel free too )


 Divide the dough into six equal parts

 pull off about a 4th and roll it into a long log

twist the dough log once around

roll a small dough ball and place on the large part of the bunny.
Do you see the bunny with the tail?

space them our well so they don't stick together.

The next item we made was the classic

Funeral Potatoes
(potatoe cheese casserole)

7-8 medium potatoes, boil, cool, peel and grate (do not over cook)
1/2 cup plus 2 tablespoons butter or margine, melted
2 cans cream of chicken soup
1 1/2 cups grated cheese
1 pint sour cream
1/3 cup diced onion (optional)
1 cup crumbled corn flakes
9x13 baking dish

Combine 1/2 cup butter, soup, cheese, sour cream and onion.  Mix in grated potatoes.  Place in baking dish, top with 2 tablespoons butter and crupbled corn flakes.  Bake 350 degrees for 45 minutes. 

We also made apple crisp, but it did not turn out the best.  So.. if anyone has any suggestions for a good apple crisp I would love to try it!

Goodbye Winter Semester.

Last Friday April 8 I finished my last final for Winter 2011 semester.  It was a bitter sweet day.  I loved my classes this semester.  I worked hard, but I think this was my best semester for classes and grades.  I think basically every class I took was like a "fun" class:  Areobics, Intro to Public Relations, Book of Mormon, Media Law and Ethics (this class kicked my butt, but I came out with an 88% which I was very happy about)

visual media.  I learned to use, Photoshop, Illustrator, and Indesign. My favorite is Illistrator.  I have found that I love to design.  Below are a few samples from my class.

Home Decor sewing:

Pink and green curtains. 
for those who know sewing I learned to use the narrow rolled hemmer foot (1/4 inch) and the ruffler foot. 
Those feet were so much to use (once I got the hang of it) and it saved so much time!

This was quited easy for how good it turned out. 
Soon I will put a tutorial of how I made it. 

other projects:
quilted sewing machine cove and a neck roll pillow. 

Got to work with an organization called CenterStage.  They plan and organize the perfessional performers that come to BYU-Idaho.  I learned that it takes so much work to put on an event, but I also learned that I love to plan events and work with people.  This was my dream job on campus.  Now I will be moving onto my next dream job working under the deam of the Business and Communications College planning their events. 

I learned so much this semester.  Not only did I have a great semester with my classes I have a great job where I get paid to do my home work and help people at the information desk and lost and found.  We also made some long lasting friends.  My husband and I have been so blessed.  We could not ask for a better life!

Now hopefully it will finally warm up more that 35 degrees and turn to spring.  I am looking forward to the next semester to see what the Lord has in store for us.

Blog Revamp


So It has been a way long time since I haev posted on my blog.  I have to admit I am a hippocratic becasue I love looking at everyone elses blog, but I just don't spend the time updating mine.  I think I would rather read someone elses than do mine becasue that is more fun and no one really cares about my blog.  I decided I need to change my attitude about that.  So... I am revamping my blog (mostly becasue I have lots of free time while at work this week).  I want to try to post on it at least once a week.  I have also have decided to not only make it a recipe blog, but a family blog and a projects blog.  I think that will make it easier to post and fun for our family to hear about what is going on in our exciting lives in Rexburg Idaho.
